Scalloped Potatoes #3


From the Kitchen of:  Pepper

Microwave butter in a 2 quart casserole on high for 45 seconds, or until melted. Stir in flour, chives, salt, pepper and dry mustard. Blend in milk.

Microwave on high 5 to 7 minutes or until thickened, stirring every other minute or so. Fold in sliced potatoes and cover.

Microwave on high 15 to 20 minutes or until potatoes are tender, stirring 3 or 4 times.

**Note: To make scalloped potatoes Au Gratin, add 3/4 to 1 cup grated cheese to sauce - stir until melted - before adding potatoes.

YIELD: 4-6 servings
