Whipped Rutabaga Casserole

The best part of this recipe is that it can be made a few days ahead and just heated up before dinner.

Cook the rutabaga in boiling salted water for 20-25 minutes or until very tender. Drain the rutabaga and place in a large bowl. Beat the rutabaga with an electric mixter until mashed. Add the butter and sour cream and beat until the mixture is fluffy. Add the brown sugar and spices. Place the rutabaga mixture in a greased casserole or gratin dish. Sprinkle the chopped bacon over the top and dust with paprika. Cover and refrigerate up to 2 days. Remove from the refrigerator two hours before serving to let warm up to room temperature. Bake at 350degrees for about 20-25 minutes, or until heated thru.
