Eggplant Cheese Casserole

Source:  Reicpes Out of this World - Women of St. Agnes Catholic Church 1969

Dip eggplant slices in mixture of water and egg. Sauté in oil. Cook beef and onion until golden. Add tomato sauce and seasonings. Layer meat sauce, eggplant, and cheese in a two quart casserole ending with cheese. Bake at 350degrees for 40 minutes.

YIELD: 6 Servings
