Tuna Fish Cakes

From the Kitchen of: Happy

  • Spray non-stick skillet with cooking spray
  • Combine tuna, eggs, onion, green pepper, cracker crumbs, cornmeal, salt and pepper in bowl; mix well.
  • Shape into 8 patties.
  • Fry patties in prepared skillet until brown around edges; turn over and fry until brown.
  • Serve with lemon wedges.
