Shrimp in Garlic Sauce

  • In a medium saucepan, bring wter and salt to boiling. Stir in rice. Cover; remove from heat. Let stand until serving time.
  • For Sauce, stir together broth and cornstarch, set aside.
  • In a wok or large skillet, cook red and green sweet peppers, onion and garlic in 1 tbsp. of the margarine over med high heat about 3 minutes or until peppers and onion are crisp tender. Remove begetables from wok. Add shrimp and remaining margarine. Stir fry over medium high heat for 3-4 minutes or until shrimp turn pink. Push shrimp from the center of the wok.
  • Stir sauce; add to center of the wok. Cook and stir until thickened and bubbly. Return vegetables to the wok. Stir ingredients together to coat with sauce. Cook and stir aobut 1 minute more or until heated through. Stir parsley into rice. Immediately serve mixture over rice.
  • Makes 4 servings.
