Ham Strata

This recipe needs to be made the day before. It is very easy to double. A 30" oven will accommodate two 9 x 12 baking dishes at a time. When you need to feed a large group of people it is really helpful to have a good part of breakfast ready when you get to the kitchen. All you will need to do is make a big bowl of fresh fruit and some cheese grits and you are ready to feed an army in no time. Kids really like this strata, too.

Directions:

  • Cut crusts from bread slices and cut the slices in halves.
  • Spray a 9x13 inch casserole dish with Pam.
  • Arrange a layer of bread in bottom of dish.
  • Arrange 1/2 of the ham on top of bread, and sprinkle with 1/2 of the combined cheeses.
  • Repeat layers.
  • Combine eggs, seasonings, and milk.
  • Pour over layers, cover, and refrigerate overnight.

    Next morning:

  • Preheat oven to 350° F.
  • Mix cornflake crumbs & melted butter.
  • Sprinkle over the strata, and bake 30 minutes covered. Remove from oven and sprinkle on remaining cheeses.
  • Bake 10 minutes longer uncovered, or until cheese is melted and bubbling and the top is starting to brown (Watch it because ovens vary a lot). It is done when a knife inserted in the middle comes out clean.
  • Let stand 10 minutes before cutting into serving size squares. Serves 12.
