Rum Fudge Pudding

  1. Preheat oven to 325 F. Grease a 5 quart ovenproof dish.
  2. Sift flour and cocoa into a medium-size bowl. Add butter, granulated sugar and egg and beat thoroughly, about 2 minutes. Turn into greased dish and sprinkle with brown sugar and chopped walnuts.
  3. In a small bowl, mix coffee, sugar and rum. Carefully pour over pudding.
  4. Bake in preheated oven 50 - 60 minutes, until firm to touch in center. Sprinkle with confectioner's sugar and serve hot with whipped cream.
