Pineapple Marshmallow Cream

From the Kitchen of:  Gina Fletcher

Combine pineapple, lemon juice and marshmallows in a medium saucepan. Place over low heat; stir until marshmallows are dissolved. Remove from heat; Cool. When partially set, fold in whipped cream.

Spoon into sherbet dishes and cool 2 hours or overnight.

YIELD: 4 servings
