Banana Fan Flambé

Pour the rum into a cup and stand in a pan or bowl of hot water to warm through gently. In a separate cup, mix the orange juice with the cinnamon and nutmeg.

Melt the butter in a large, heavy-bottomed skillet over low heat. Lightly brush fans with egg white, then add them to the pan and cook gently for about 5 minutes, turning once, until golden brown on both sides. Sprinkle the sugar on after browning.**

Pour in the spiced orange juice and heat through gently. Turn off the heat. Pour the warmed rum over the bananas and immediatelly set a lit match to it. ***

Let the flames die completely, then divide the fans and sauce between 4 warmed individual dishes and serve with ice cream.

** Use a spatula and turn the fans very gently so that they do not break or lose their attractive shape.

*** Hold the match just above the side of the pan and stand well back since the flames will shoot high for a few seconds and could be dangerous.
