Mango Sherbert

Arrange Mango cubes in a single layer on a baking sheet and freeze solid. Once frozen, fruit can be used right away or stored in a freezer in a plastic bag. Put mango and sugar in a food processor. Holding the processor firmly on your work surface, process until the mango is finely chopped. Scrape down the sides of the bowl several times during processing. With the machine running, add lime juice and egg white and continue to process until mixture is completely smooth and fluffy.

Serve immediately or store in freezer.

** NOTE Use only Grade A, clean, uncracked egg. If you do not wish to eat raw egg white, look for pasteurized eggs or Just Whites, a pasteurized egg product.
