Apple Cobbler Tostadas

Pour oil to depth of 6" into medium saucepan, 8" deep. Heat to 325 degrees.Add 1 tortilla. Fry, forming basket shape and holding under oil with astraight, long handled ladle pressed in the center, until light brown andcrisp, about 2 minutes. Drain on paper towels. Sprinkle with cimmamon andconfectioner's sugar. Repeat with remaining tortillas. If possible try toflatten the bottoms of the tostadas while hot, so they will sit on platesbetter.

Preheat oven to 350 degrees. Heat 1/4 C sugar in heavy medium sauce-pan overlow heat until sugar melts, swirling pan occasionally. Increase heat tomedium. Add apples, butter and spices. Cook until sauce is smooth, applesare coated and most of the liquid has evaporated, about 10 minutes. Addcream, increase heat to high and stir 2 minutes. Pour mixture into 8" squarebaking dish. Top with brown sugar. Bake until well browned, about 25minutes. Cool slightly. Arrange tostadas on plates. Fill with apple mixture.Top with vanilla ice cream.
