Russell's Carrot Cake

Source:   Russell Priest, Decatur, Ala

  • Sift together the flour, baking soda, salt and cinnamon.
  • Cream Oil with sugar.
  • Add eggs, continue beating, then add finely grated carrots, blending well and scraping the sides of the mixing bowl.
  • Add the flour mixture and blend several minutes.
  • Pour into either cake pans or 13x9"sheet pan.
  • Bake at 350 degrees for 30 to 35 min. or until done.
  • Frost with Cream Cheese Frosting.
