RICOTTA CAKE

  1. Prepare cake mix as directed on the box, using 2 of the eggs.
  2. Pour into a greased and floured Bundt pan or 9 x 13-inch pan.
  3. Combine Ricotta cheese, 1 egg, sugar and Amaretto or vanilla.
  4. Spoon this mixture over the cake batter.
  5. Bake at 350 degrees for 55 to 60 minutes. Cool.
  6. Dust with powdered sugar and a little lemon peel, if you desire.
