PUMPKIN POUND CAKE

  • Cream together butter and sugar with electric mixer.
  • Add vanilla and then eggs one at a time, mixing after each addition.
  • By hand, stir in the dry ingredients alternately with the pumpkin.
  • Then fold in chopped pecans (the recipe did not call for them.)
  • Spoon into a 12 Cup Bundt pan/tube pan or 2 loaf pans that have been greased and lightly floured.
  • Bake 350 F 60-70 minutes.
  • Cool in pan 15 minutes before removing.
