Lazy Daisy Cake

  • Combine eggs, sugar and vanilla, beating until thick. Add sifted flour, baking powder and salt. Beat well.
  • Heat milk and butter to boiling point and add to batter. Mix well.
  • Bake in a greased 8x8" baking pan at 350° for 30 to 40 minutes.

  • For the topping, combine sugar, butter, cream, coconut and nuts (if used).
  • Frost while cake is still warm and place under broiler for 1 to 2 minutes or until frosting bubbles and coconut is golden brown. Cool completely on rack before cutting.

    NOTE: This recipe may be doubled and baked in a 9x13" pan.
