COMMENTS: This is a good way to use up bananas that have overripened. Bananas can be frozen to use in cake recipes.

1 1/2 cup shortening

2 1/2 cup sugar

4 eggs

6 well ripened bananas, mashed

2 teaspoons soda

pinch of salt

3 cup flour

1 teaspoon vanilla

• Cream shortening and sugar together in bowl. Add eggs, one at a time, beating well after each addition. Add bananas, mixing well. Add remaining ingredients, mixing well.
• Pour into large greased and floured bundt pan.
• Bake at 300° for 1 1/2 hours.
