Peachy Orange Muffins

This is an unbelievably delicious muffin.

Preheat oven to 375F. Put the cut up orange, peel and all, into a food processor or blender. Add the wet ingredients and process until finely chopped. Stir together the dry ingredients. Cream the shortening and the sugar. Add the dry ingredients and the wet ones all at once. Fold in the peaches gently. Combine only until you can no longer see any dry spots in the batter. Pour into well greased muffin tins and bake at 375F until golden. About 20 minutes. Makes 12 large muffins.
