Cinnamon Raisin Biscuits

From the Kitchen of:  Pepper
Source:  WRAL Recipe Remakes

This makes 10 to 12 biscuits

    Preparation:

  1. Preheat oven to 450 degrees. Lightly spray baking sheet with vegetable cooking spray and set aside.
  2. Combine baking mix with butter granules and sugar. Add cinnamon and raisins. Toss mixture well, then add milk and stir just until a soft dough forms. Do not overmix. If the dough is sticky, gradually stir in enough baking mix to make the dough easy to handle (add 1 teaspoon at a time).
  3. Turn dough onto a surface dusted with baking mix and knead about 10 times. Roll the dough about 1/2 inch thick and cut with a 2-inch biscuit cutter. Place biscuits onto prepared baking sheet. Lightly spray tops of biscuits with cooking spray. Bake for 8 to 10 minutes or until golden brown.
  4. While biscuits bake, prepare glaze by combining powdered sugar with skim milk and stir until sugar is dissolved. Drizzle sugar mixture over hot biscuits. Serve piping hot. Each biscuit contains 150 calories, 3 grams fat.
