Baked Fish with Topping

A friend in Florida gave me this recipe and I never found one like it since. It's very delicious.

Fish
8-10		Catfish fillets, *seasoned

*(I use McCormick broiled steak seasoning, but you can just salt & pepper them if you prefer.)
Spray a little butter on each fillet and bake in 350° oven until the fish flake when you test them for doneness.
Remove from oven and let cool completely. Fish must be cool before you add the topping or the topping will run.
While the fish is baking mix the topping.

Topping
1/2	C	Mayonnaise
1/2	C	Butter or margarine
1/4	C	Parmesan cheese (grated)
		Green onions (tops & bottoms chopped real fine) lots & lots of them. The more green onions the better.

Mix ingredients together and refrigerate while the fish is cooling.
After fish is cooled place dabs of topping on each fillet and spread until each piece is well coated.
Place pan of fish under broiler for 5 minutes or until topping is golden brown. ENJOY!!!
I use pond catfish, but you can use fish of your choice. Everyone I have served this to raves over it and even people who don't like baked fish come back for more, plus ask for the recipe.
